Meet our Butcher Paul - Farm Shop Rushfields

Paul has been with us from the first day the Farm Shop opened, providing years of expertise making sure you get a precise cut and a quality sausage every week. The Farm Shop wouldn't be the same without him.

The Perfect Cut

Whether it’s for a weekday supper or big Sunday roast, our butchery can make any meat dish sizzle. We offer fresh beef, pork, lamb and poultry from local farms passionate about provenance and animal welfare. Our beef is from Grange Farm in Poynings and hung for 21 days for exceptional flavour. When in season, we also offer game such as pigeon and guinea fowl and venison.

Home-made Sausages


Our butcher Paul Channon makes our famous home-made sausages in tempting varieties, like sage and red onion, and gluten-free with Mediterranean herbs. The taste and look of a sausage always depend on the butcher making them. Having won multiple awards for his produce, Paul has proven he's quite the sausage maker. Try our Sussex sausages yourself and taste the difference! Because of our regional focus, you really get to taste the finest local ingredients.
